Coming directly to the point, shortening is 100% fat and has no water content, while butter has 80% fat and the rest is water content. Steam is produced while baking or cooking with butter and no such thing happens with shortening. With these characteristics, the final product is different.

The other main difference is that butter contains flavour, but shortening is flavourless. Some shortening with flavour is also available in the market, but bakeries use flavourless shortening only to bring out the real flavour of the baked goods.
